Hummus
Ingredients
Yields 1.5 quarts
- 2 cloves Minced Garlic 
- ¼ cup Chopped Cilantro 
- ¼ each Chopped Jalapeno with seeds 
- ¼ cup Fresh Squeezed Lemon Juice 
- 2 tbsp Fresh Squeezed Lime Juice 
- 2 cans Garbanzo Beans 
- ¼ cup Tahini 
- ¼ cup Extra Virgin Olive Oil 
- 1 tsp Ground Cumin 
- ½ tsp Cayenne Pepper 
- 1 tbsp Kosher Salt 
Directions
- Place all ingredients into large mixing bowl. 
- Using immersion blender, puree ingredients until consistency is mostly smooth, and all ingredients are blended together evenly. 
Topping
Ingredients
- 2 cups Hummus 
- ¼ cup Sliced Persian Cucumber (1/4” thick) 
- 2 tbsp Sliced Red Onion (1/8” thick) 
- ¼ cup Organic Cherry Tomatoes (sliced in half) 
- 2 tbsp Kalamata Olives (pitted, sliced in half) 
- 1 tbsp Chopped Parsley 
- 1 tbsp Extra Virgin Olive Oil 
- 2 each Pita Bread 
Directions
- Spread hummus evenly on to large serving platter, creating a lip around the edge, and a space in the middle to house the other veggies. 
- Toss the cucumber, onion, tomatoes, olives, parsley and olive oil in small bowl until evenly mixed, then top the hummus with the veggies. 
- Warm pita bread on grill or in oven until soft. Cut pita into pieces
