  • 1              avocado lightly mashed

  • 2 slices multigrain bread

  • 1              egg, hardboiled & diced

  • 6 oz        shredded brussels sprouts

  • 6 oz        garbanzo beans

  • 1 oz        feta cheese

  • 1 oz        extra virgin olive oil

  • 1 tsp      paprika

  • 1 tsp      salt/pepper


  1. Toast bread until golden brown

  2. Lightly mix extra virgin olive oil, salt/pepper and avocado in a mixing bowl

  3. Lightly fry garbanzo beans in vegetable oil for an extra crunch

  4. Do a quick sauté on the Brussels sprouts with light extra virgin oil

  5. Build avocado toast in the following order: Bread, avocado toast, garbanzo beans, diced eggs, Brussels sprouts, feta cheese, paprika sprinkle.

  6. Drizzle of extra virgin of olive oil (optional) and enjoy.
